adsorption as a method of immobilizing enzymes
I don't understand how it works, because the enzymes and support are both hydrophobic therefore should be non polar then how can they have ionic bonds between them? That would mean they have charges on them, so then that means they are polar. So then why can't they react with water? I thought all polar molecules can react with water.
