Moisture Content of Food by Evaporation

Take a sample of food.

Use a top-pan balance to find out the mass of the food at the start.

Evaporate the water from the food in a drying oven over 24-48 hours (depending on the oven).

Take the mass of the food again.

The difference in mass is the mass of water that was present in the food.
